Bean Paste Can Save Your Life

A study from China shows, as several other studies before, that the victims of the COVID-19 have unhealthy gut flora related to low intake of fiber and/or high intake of substances that kill the flora, such as medication, alcohol, and junk food. As a result, their gut flora, which is a large part of the immune system, will not function properly. The gut produces substances that the immune system needs to fight infections and other diseases. The same news (not news for us vegans) is coming from Spain correlated to Corona.

Fiber is found in unrefined plants only, so every time you stuff yourself with other food, including animals and refined food, you loose the opportunity to eat fiber. In other words, you loose your chance to get strong protection against viruses and other germs. We can never be healthier than our gut micro-biome, something I have written about before and that you have heard as a mantra many times; “It starts with the gut.”

Here is a simple recipe to serve legumes (beans, lentils, pulses etc) that we always do at our retreats. These amazing super foods have been excluded from the western pre-fab diet and so has our health as a result.

  • 4 dl/cups of cooked beans (soak and cook yourself, don’t be lazy)
  • 1-2 cloves of raw garlic (don’t feel good on raw? Steam them or do both.)
  • a big bunch of Thai herbs as: Thai basil, cilantro, holy basil, or other
  • juice from 1 lime
  • 1/2-1 table spoons of olive oil
  • salt & pepper

Mix all the ingredients in a mixer. Spice it up with a drop of chili or fresh pepper if you want. It gets nicer if you leave it in the fridge for 1 hour. Voila!

Beans, and in particular lentils and darker colored beans, top the super food lists and should be on our plate daily or at least a few times per week. They are packed with minerals and protein, but we eat far too little of them. When we stop eating some things our body stops producing the enzymes specialized to digest them, but they come back when we start again (if there is no underlying digestive issues). It takes about two weeks for most people.
